The Best Dairy-Free Coffee Cake

In case you were wondering… coffee cake does not have coffee in it. It is simply meant to be enjoyed with a hot cup of Joe. Or cold if you prefer. But let’s be honest, this doughy, cinnamon and sugary delight can be savored anywhere, anytime, with anything or on its own.

With Thanksgiving right around the corner, this is a make-ahead go to for me! The last thing I want to worry about on Thanksgiving morning is breakfast! So having coffee cake made ahead of time, along with a make ahead protein, like egg-casserole or turkey bacon, is a pro move! Especially if you already have house guests.


I hadn’t had coffee cake in years, and one reason being I typically need to make my own sweets to make them non-dairy and nut free.

One day I was just craving a sugary, cinnamon and doughy treat and aha, coffee cake! I didn’t realize it is SO easy to make! You can put this in different baking/cake dishes to make it look more fancy, but this method is the easy-peasy any day way! Plus, it’s super easy to whip up for company and brunches, not to mention the upcoming holidays! And sigh… as I’m sipping on an iced, almond milk PSL… it really needs some coffee cake!



Ingredients:

1 cup vegetable oil

2 eggs

1 tsp vanilla

I cup almond milk

1 cup sugar

3 cups flour

3 tsp baking powder

½ tsp salt

1 ½ cups brown sugar

2 tsp cinnamon

1/3-1/2 cup melted Violife or Earth Balance dairy/soy-free butter


Make it:

1) Preheat oven to 350 degrees and butter a 9×13 baking dish.

2) Prepare streusel by whisking brown sugar and cinnamon. (Add chopped pecans or walnuts if desired)

3) In a mixing bowl, whisk eggs, oil vanilla and almond milk.

4) In another bowl, mix sugar, flour, baking powder and salt.

5) Combine the egg mixture with the dry mix.

6) Layer ½ the batter in the buttered baking dish followed by ½ the streusel and repeat with other ½.

7) Drizzle the top with desired amount of melted butter (but really, just got for the full ½ cup!)

8) Cover with foil and bake 25-30 minutes. Remove foil and bake additional 10 minutes.

9) Serve warm with coffee or tea, enjoy room temp or even cold!
